Hey Bébé Where Yat? is Chef Joe’s Maylene kitchen — New Orleans soul channeled through Culinary Institute of America training and 30 years of professional cooking. Expect playful, inventive plates grounded in tradition: Double Cheeseburger, Shrimp n Grits, and Jambalaya.
Family steers our flavor: Anna Mae and Leo set Joe’s course, Mamie’s boululatta and her Italian-bread recipe still shape our loaves, and early shifts in a po-boy shop taught the value of hard work and quality. Joe has cooked in standalone restaurants, national hotel kitchens, and as a private chef on luxury motor yachts; he’s lived in Helena 19 years, is married to Kathy for twenty years, and his son Joey helps on the food truck — this site is for the Maylene restaurant.
